Have you ever eaten Tomato Soup with Garlic Croutons? It tastes sweet and sour, but what's more, it's easy to make. This tomato soup is best served hot and has quite a thick texture. This soup is very suitable to be served when the weather is cold, or if you have a fever, the soup can warm your body.

For more information, tomato soup is perfect served with croutons. What are croutons? Croutons are bread that is rebaked and seasoned. Croutons will add flavour when eaten with tomato soup, and the crunchy texture will also be very suitable.

I added more flavour to this tomato soup recipe by using dried oregano. I put green beans, corn kernels, and sausages in the middle. But you can use your favourite vegetables instead. Even if you make it without filling, the soup is still tasty.

In this recipe, I use butter and garlic, these two ingredients make the taste savoury and garlicky. I use plain bread for the recipe, but you can replace it with baguettes or other types of bread you can find in your area. If you are a cheese lover, you can also add cheese on top of the croutons. It will taste even better.

Note** In this Tomato Soup recipe, I use water to make the tomato soup, I suggest you use beef stock or chicken stock to make it tastier. You can bake the croutons in the oven to get the best result. The oven will make the croutons cook evenly. If you don't have an oven, it's okay to use a pan.

ingredients

  • For the soup base

    • 400 gramtomato
    • 80 gramonion
    • 50 gramgreen beans
    • 65 gramcorn kernels
    • 60 gramsausage
    • 400 mlwater
    • 2 tbspbutter
    • 1 tbspall purpose flour
    • 1 tspsalt
    • 1 tsppepper
    • 1 tspsugar
    • 1 tspdried oregano
    • 1 pc(s)garlic
  • For the croutons

    • 4 pcsplain white bread
    • 2 tbspbutter
    • 2 tbspcooking oil
    • 1 tspgarlic(minced)
    • 0.5 tspsalt
    • 0.5 tsppepper

Making the tomato soup

  1. Cut the onion and tomato into small pieces.

  2. Boils the tomato, onion and garlic until soft for around 6 minutes. Save some of the water for next step.

  3. Blend the tomato, garlic, onion and add water used for boiling.

  4. Cut sausage into slices and cut the green beans into small pieces.

  5. Put the butter, heat the pan over medium heat, and stir the butter until it is melted. Add the all-purpose flour, and keep stirring until it thickens.

  6. Pour the blended ingredients into the pan and put the corn kernels, green beans and sausage. Add seasonings; salt, pepper, sugar, and dried oregano. Stir well.

  7. Keep stirring it for around 4-5 minutes, then turn off the fire and set aside.

Making the croutons

  1. Melt the butter, you can use a microwave or on the pan over medium heat.
  2. Put the butter into a bowl, add cooking oil and minced garlic. Add seasonings; salt and pepper. Mix it well.

  3. Cut the plain bread into small cubes. Put it in a bowl and pour the oil. Mix it well.

  4. Heat the pan over medium heat. Pan-fry the bread until crispy on both sides for around 3 minutes and set aside.

  5. Put the tomato soup in a bowl, you can add the croutons on the top or on a separate plate. Enjoy it while it's hot!
