Tired of baking and eating something chocolatey, well introducing the blondies. Yes blondies, which basically means blonde brownies. Blondies are basically the total opposite of brownies and they are so delicious!

The base of blondies can be white chocolate, but for me, it’s a little bit too sweet. Blondies are basically giant cookies too, so in this recipe, it’s similar to a big cookie except that this recipe, is completely egg-free! Why did I make it egg-free you ask? Well sometimes, you just don’t have enough eggs in the fridge or maybe you’re tired of having eggs in all of your baking recipes. This recipe will solve all your egg-problems.

So how will we get a rise and the batter to hold its shape together without eggs? Well, we’ll get a rise from baking powder, and we substitute the eggs with cream.

That already sounds promising enough right? To add to that, we have added strawberry jam into the batter to give this more flavour. I just love that strawberries give tanginess so it balances out the sweetness from the blondie batter itself. It also doesn’t hurt that it looks pretty too!

Notes:

  • Whenever mixing, when dry ingredients are added, be careful not to overmix. This is because gluten forms when you overwork the dry ingredients, creating a hard product in the process.
  • Strawberry jam can be substituted for other jams, but I suggest something that has tang or acidity to balance out the sweetness.
  • Powdered sugar dusting is optional.

  • Strawberry Blondies

    • 56 grambutter
    • 56 grambrown sugar
    • 56 gramcastor sugar
    • 22 mlcream
    • 0.5 tspvanilla extract
    • 85 gramall-purpose flour
    • 0.5 tspcorn starch
    • 0.13 tspbaking soda
    • 0.25 tspbaking powder
    • 0.25 tspsalt
    • 40 gramstrawberry jam
    • powdered sugar(as needed)

Making the Batter

  1. Melt the butter in a pan on low heat or in the microwave on high in two 30-seconds intervals, or until melted.
  2. In a bowl, whisk together the sugars and salt.

  3. Add in the melted butter and mix together until well combined, for about 1-2 minutes or until the butter cools to room temperature.

  4. Now add the cream and vanilla and whisk until fully incorporated.

  5. In a separate bowl, add all dry ingredients together and whisk. Then add the dry ingredients to the wet mixture gradually, using a spatula until everything is well-combined. Be careful not to overmix.

  6. Add half of the strawberry jam and mix it roughly, don’t mix too well because we just want the little pockets of strawberry jam to be in the batter.

  7. Prepare a 13x13 cm baking tray and put an 18x18 cm baking paper in it. Make sure that the baking paper is cut 5 cm deep on each corner so that the baking paper fits in the pan.

  8. Add the batter onto the pan, spreading it out on all sides making sure everything is even. Then add the rest of the strawberry jam in little dollops on top of the batter.

  9. Finally, using a toothpick, run it all around the batter to make a marble effect on top. Bake it for 25 minutes or until a toothpick inserted comes out clean.

  10. Let it cool down for an hour and cut into 9 equal squares. Dust with powdered sugar on top.
