Did you know that Oreos are vegan? This fact came as a surprise to me too. Oreos are known to be one of the best cookies in the world because of their unique taste. It even has its ice-cream flavour, commonly known as cookies n' creme.

On this occasion, I will share an authentic Oreo recipe called 'Soft Oreo Cookies'. The name is pretty obvious that I know you already recognize what kind of cake we will make. If you are both an oreo and soft cookies lover, then this recipe is a must try for you!

For this recipe, I tried making something a bit different at first. Although it came as more of an accident, it turned out pretty good, considering that this was not the outcome that I had in mind.

You'll make meringue in this recipe as it is the base for the cookies and as a kid, I have always loved Oreos and Oreo-flavoured desserts. You will also find that the methods and ingredients are similar to making macarons, but it has a lot more almond flour to give it the cake-like texture and bite. These cookies don't contain any butter or flour, so it's kind of a guilt-free snack.

This recipe can also be made into a sheet cake that you can layer with some Chantilly in the middle, but today I just wanna make a simple version of it which is a soft cookie. Soft Oreo Cookies

ingredients

  • For the cookies

    • 60 gramegg whites
    • 80 gramsugar
    • 93 gramalmond flour
    • 10 grammilk powder
    • 0.5 tspsalt
    • 0.25 tspvanilla extract
    • 1 tbsporeo powder
    • oreo powder(as needed, for topping)

Making soft ore cookies

  1. Take your egg whites and whisk them with an electric mixer, slowly adding your castor sugar until it forms a stiff peak.

  2. In a separate bowl, add the almond flour, milk powder and salt. Mix everything until combined.

  3. Mix in the vanilla extract well into the meringue using a whisk.

  4. Fold ⅓ of the meringue to the dry ingredients with a spatula. Then pour everything back into the meringue bowl and mix everything until well combined.

  5. Add your Oreo powder and mix everything.

  6. Preheat the oven to 170 degrees Celsius. Place baking paper or baking mat onto your baking tray.
  7. Take a piping bag and add your batter.

  8. Pipe the batter onto the baking tray, making a circular shape, making sure to have space in between each cookie.

  9. Sprinkle some oreo powder on each cookie.

  10. Bake the cookies for 15 minutes or until slightly brown on the edges.
