When you think of the name “pillow bread” what do you think it refers to? Pillows of course! So how can bread be called such a silly name? Well, there are different factors: it’s either the flavour, shape or texture. In this case, it’s not the flavour! This recipe refers to its texture but the shape is quite different.

The recent popularity of pillow bread started when a bakery called Mad Milk in Indonesia made its version. Before that, pillow bread was mostly made popular in Japan with its pillow-like shape and texture. The colour was also mostly pale, to almost white.

The great thing about baking is that you don’t have to purchase it anywhere else, you can just make it yourself! And the best part, you can make your version of the pillow bread.

In this pillow bread recipe, the method is pretty simple and it’s a great beginner’s recipe too. You can also choose any kind of filling you want but I went with peanut butter and strawberry jam to make my PB&J version.

As for the pillow bread dough itself, you will need to have two bowls for this: one for the starter dough and one for the main dough. The starter dough acts as a leavening for the main dough, they will eventually come together to make one dough, but this method is great for bread-making. It helps beginners practice how to activate the yeast.

And of course, the main difference in this recipe is its shape. I went with a pastel-like shape to make it a personal bread as well as an egg wash on top to give it a glossy, mouth-watering finish.

This pillow bread texture is super soft, and fluffy, just like a pillow and I guarantee you’d want to keep making it!

ingredients

  • Ingredients for the bowl A

    • 55 grambread flour
    • 25 gramcake flour
    • 1 tspyeast
    • 1.33 tspsugar(room temperature)
    • 1 pc(s)beaten egg
    • 70 mlwater
  • Ingredients for the bowl B

    • 55 grambread flour
    • 25 gramcake flour
    • 1.33 tspsalt
    • 25 grambutter(room temperature)
  • For the fillings

    • 50 grampeanut butter
    • 50 gramstrawberry jam
  • Additional

    • flour(as needed, for dusting)
    • beaten egg(for egg wash)
    • butter(as needed, room temperature)

Making the Pillow Bread with Peanut Butter & Jam Fillings

  1. Beat your egg and measure 20 grams, leave the rest for the egg wash.

  2. In a bowl, place your bread flour, cake flour, yeast, and sugar. Do not mix.

  3. In another bowl, add your other bread flour and cake flour along with salt and butter. Do not mix.

  4. Heat up your water in the microwave until it reaches 110 degrees Celsius. We don’t want it to be too hot.

  5. Pour the warm water directly on top of the yeast to activate it. Mix with a spatula until the dough comes together.

  6. Take your measured beaten egg and pour it into bowl A. Mix together with a spatula until it forms a sticky dough. This will be your starter dough.

  7. Add everything in bowl B to bowl A and mix using the spatula until it forms a tacky dough.

  8. On a work surface, place the dough and begin kneading until it comes together and becomes a smooth dough. Shape it into a ball.

  9. Take a clean bowl and brush it with some butter.

  10. Take your dough and place it in the bowl. Cover the bowl with plastic wrap and set it aside at room temperature to rest for 25 minutes or doubled in size.

  11. Place your strawberry jam and peanut butter into individual piping bags.

  12. Once the dough has risen, take your finger and dust it with some flour. Poke the dough in the center and if the dough doesn’t bounce back, it’s ready.

  13. Punch the dough to release the gas.

  14. Take a measuring scale and place the dough on top. Divide the dough into 5 equal portions.

  15. Shape the dough into balls and place on your work surface. Cover the top of the dough and let it rest for 10 minutes.

  16. Flatten the dough and roll it out to an oval shape (10x12 cm) about 0.5cm thick.

  17. Pipe your strawberry jam and peanut butter, alternatively, make 4 lines on half of your flattened dough. Make sure to leave a 3 cm space from the edges and end with the peanut butter.

  18. Fold and seal the edges together. Place the dough on your baking tray.

  19. Place baking paper or baking mat on your tray.
  20. Take your bench scraper and make a 1.5 cm slit from the edge of the dough. Be careful not to make the slit too long as it will reach your filling.

  21. Cover with a plastic wrap and rest for 20 minutes.

  22. Brush the top of your dough with egg wash until fully covered. Preheat the oven to 200 degrees Celsius.

  23. Bake for 15 minutes or until golden brown on top.
