This is the perfect recipe for you that crave both a cake and a cookie at the same time! It’s crumbly, sweet and creamy, and the perfect treat to indulge when you are a pandan lover like me, the pandan whoopie pie.

What are Whoopie Pies?

A whoopie pie is considered baked good that’s either a cookie, cake, pie or sandwich. Whoopie pies are usually made with two chocolate cakes (shaped like a cookie) that are filled with a type of white cream in the centre. Some even refer to this as the Big Fat Oreo. But throughout the years, people have developed other flavours for it like pumpkin, gingerbread, red velvet and or like what I’m making today, pandan!

Origin of Whoopie Pies

The origin of whoopie pies dates back around 100 years ago in the Northwest of the United States. This became a controversy as 5 states each claimed to be the origin place of the whoopie pies. But in 2011, Maine was considered to be named as the origin place of the whoopie pie.

The name whoopie pie was named after a company from Massachusetts that branded them as “Whoopee Pies” and ever since the name has stuck and become known as what we all know now as Whoopie Pie.

pandan whoopie pie thumbnail 2.JPG Whoopie Pies are versatile in terms of flavour, and I thought, as an Indonesian myself, a pandan whoopie pie would be a great idea. And instead of a regular white cream in the centre, I wanted something to balance out the sweetness, which is why I made a cream cheese frosting. Although, you do have the option to add any types of fillings you want, such as buttercream, whipped cream or even ganache. But for me, the cream cheese frosting was my favourite to make for this recipe.

Pandan is one of my favourite flavours. It has a sweet aroma that just fits so well with the whoopie pie texture. The cream cheese frosting is also a great pairing, giving a little tang that balances out the sweetness of the pandan whoopie pies.

When It’s Best Served

Pandan whoopie pies are best consumed chilled. This way the cream cheese frosting in the center doesn’t melt. Each bite is just so full of flavour. So grab your whisk and let’s get to baking these pandan whoopie pies!

Some tips that might be useful:

  • Remember, to make the frosting you need to chill it in the fridge first.
  • Make sure the whoopie pies have completely cooled before filling them.

ingredients

  • for the cream cheese frosting

    • 15 gramcastor sugar
    • 1 pinch(es)salt
    • 0.5 tspvanilla extract
    • 60 gramcream cheese(in room temperature)
    • 22 mlheavy cream
  • for the pandan whoopie pies

    • 95 gramall-purpose flour
    • 28 gramcoconut oil
    • 40 mlmilk
    • 0.25 tbsppandan paste
    • 1 pc(s)yolk
    • 0.13 tspbaking soda
    • 0.5 tspbaking powder
    • 0.13 tspsalt
    • 28 gramunsalted butter(in room temperature)
    • 55 gramcastor sugar

Make the cream cheese frosting

  1. Cream the cream cheese, castor sugar, salt and vanilla extract together until creamy.

  2. Add the heavy cream and whisk until fluffy and fully combined.

  3. Add your cream cheese frosting to a piping bag and set in the fridge to chill until use.

Make the pandan whoopie pies

  1. Preheat the oven to 170 C.
  2. In a bowl, sift in all-purpose flour, salt, baking powder, and baking soda. Whisk everything together. These will be the dry ingredients.

  3. In a separate container, add the yolk, coconut oil, milk and pandan paste. Whisk until fully combined. These will be the wet ingredients.

  4. In another bowl, add the unsalted butter and castor sugar. Whisk with an electric mixer until fluffy.

  5. Now add the dry and wet ingredients by alternating one another in-between. First add 1/3 of the dry ingredients, and while slowly whisking, add half of the wet ingredients. Continue until all the ingredients are combined.

  6. Place a baking paper/baking mat onto the baking tray.
  7. Scoop the batter onto the baking tray by using an ice cream scooper. Make sure there are spaces in between each scoop as it will spread.

  8. Bake the pandan whoopie pies for 9 mins. or until firm to the touch.

  9. Cool down the whoopie pies on a cooling rack

  10. Pipe out the cream cheese frosting to one side of the whoopie pie. Distribute the frosting evenly across half of the whoopie pies.

  11. Cover the top of the whoopie pies with the other half of the whoopie pies.

  12. Now serve them with a glass of milk on the side!
