Olive oil cake sounds interesting, don’t you think? This type of cake is definitely not new but not a lot of people know about it.

Not really known where its main origin came from, this amazing confectionery has become popular in the western countries, mainly in the United States.

It has simple main ingredients but of course, olive oil cake tastes like olive oil. At first, you wouldn’t think that olive oil would taste good with sweets, but it does! Think about how people usually drink martinis with a side of olives. Not saying that’s how it exactly tastes like but you get the big picture.

This is why I love baking, it gives you so much room to explore new ideas and think of so many things that usually won’t go well together, work!

Since the main ingredient is olive oil, there won’t be any butter used in this recipe. One thing you have to know in baking is that oils (any kind) always add more moisture to your baked goods than butter. So without further ado, let’s get started, shall we?!

Important Note*

When dry ingredients are in, make sure to mix the batter slowly, careful not to overmix.

  • Olive Oil Cake

    • 55 gramall-purpose flour
    • 15 gramcornstarch
    • 0.33 tspbaking powder
    • 0.75 tspsalt
    • 1 pc(s)egg
    • 65 gramcastor sugar
    • 50 gramolive oil
    • 60 mlmilk
    • 10 gramcastor sugar(for topping)
    • powdered sugar(as needed, for dusting)
    • oil(as needed, to brush pan)

Making the Cake

  1. Preheat the oven to 175 degrees celsius. Grab a 10cm baking pan and brush the surface with oil.

  2. In a bowl, add flour, baking powder and salt and mix everything well with a whisk.

  3. In another bowl, add the egg and using an electric mixer, whisk until the egg is fully beaten. Then add the sugar (65 grams) and whisk until light and fluffy.

  4. Turn the mixer on low and stream in the olive oil.

  5. Now change to a regular whisk and add in the dry ingredients and whisk until fully combined.

  6. Finally add the milk and whisk gently until fully incorporated.

  7. Prepare a 10 cm baking pan and add in your batter to the pan.

  8. Add the sugar (10 grams) on top of the batter until fully covered and bake for 50 minutes or until a toothpick comes out clean when inserted. Let it cool and dust powdered sugar on top.
