Tarte aux pommes is a French term for apple tart in english. Even though this is a sort of apple pie, this dish is distinctly different in taste and texture. It’s a simple and easy-to-make type of recipe.

Inside of a Tarte Aux Pommes

A classic tarte aux pommes crust has a more similarity to a sugar cookie rather than a flaky pie crust. It’s more sweet and a crumbly, buttery texture.

It is then filled with a soft and creamy frangipane. And what is a frangipane you may ask? It is a sweet almond-flavoured custard that is often used in French baking. You will most likely come across it when you eat an almond croissant.

Finally, the Tarte aux Pommes is topped with thin slices of apples. Many tarte aux pommes might use a red apple but in my recipe, I will use the classic granny smith apples.

##Tarte Aux Pommes Granny with Smith Apples For my recipe of tarte aux pommes, I substituted a regular red apple for granny smiths. The reason is that granny smith apples have more tartness in terms of flavours and retain their shape more than a regular red apple. The tartness balances out the sweetness of the crust and frangipane filling.

Enjoy them in Mini Form

Now I don’t know about you but desserts are just better than eating them in small portions. So this is why I chose to make these tarte aux pommes, mini.

While still hot, this tarte aux pommes is so good with a dollop of whipped cream or vanilla ice cream. However, it’s also great in cold! Because the crust is more of a sugar cookie crust, it doesn’t get stale like a pie crust would, so you can enjoy them in both hot and cold.

In each bite of this tarte aux pommes, you will get a crumbly and crispy buttery crust, along with a creamy and crunchy almond filling as well as a balance of a tangy, soft but crisp apple on top. Just the most perfect and balance bite!

You can make these tarte aux pommes in advanced for a dinner party or get-together. Then you can heat them in the oven for a good 5-10 mins on high heat. Just delicious and fun to make, too! I sure do hope you enjoy making and eating them too!

Some tips that might be useful:

  • You can always use other types of apples you want, if you do want a sweeter taste, i suggest using fuji or red apples.
  • You can make this into a big size tarte aux pommes. This recipe is also perfect for a 22cm round tarte aux pommes.
  • This recipe requires a piping bag.

ingredients

  • for the crust

    • 60 gramunsalted butter (cold)
    • 50 grampowdered sugar
    • 1 pinch(es)salt
    • 1 pc(s)yolk
    • 0.5 tspvanilla extract
    • 80 gramcake flour
    • 30 gramalmond powder
  • for frangipane

    • 35 gramunsalted butter(in a room temperature)
    • 35 gramcastor sugar
    • 30 grambeaten egg
    • 35 gramalmond powder
  • for topping

    • 0.5 pc(s)granny smith apple
  • Extra ingredients

    • 10 gramflour(as needed, for dusting)

Making the crust

  1. Sift cake flour, almond powder, salt and powdered sugar into a bowl. Mix it with a whisk until fully incorporated. This is the dry ingredients.

  2. Prepare some cold unsalted butter and chop them into small dices.

  3. In the bowl of dry ingredients, add the cold unsalted butter, yolk and vanilla extract.

  4. Mix everything with a fork and use your hands to lightly crumble the butter, lightly until a crumbly dough forms.

  5. Shape the dough into a square and wrap them in cling wrap. Roll the dough to press the dough. Set in the fridge to chill for 10 mins.

Make the frangipane

  1. In a bowl, add room temperature unsalted butter and castor sugar. Cream everything with an electric mixer until light and fluffy.

  2. Add the beaten egg slowly whisk whisking manually.

  3. Add the almond powder and fold it in with a spatula until fully incorporated.

Assembling the tarte aux pommes

  1. Cut the granny smith apple into thin slices, about 3mm.

  2. Preheat the oven to 180 C.
  3. Take the chilled crust dough out of the fridge and dust your work surface and rolling pin with some flour. Roll the dough out into a flat dough, about 1.5 cm thick.

  4. Cut the dough with a 10 cm round cookie cutter.

  5. Lay the dough to the tart mould and press lightly to fit the dough into the mould. Cut off any excess dough.

  6. Using a fork, lightly make indentations all across.

  7. Add frangipane into a piping bag and pipe out about 3/4 deep into each mould.

  8. Add the granny smith apple slices on top, layering them one against the other to make a pattern.

  9. Bake the tarte aux pommes for about 30 mins. or until golden brown on the crust.
  10. Let it cool for 5 mins before serving it hot. You can also let it completely cool, whichever you’d prefer.

  11. Now take them out of the moulds and enjoy!
