In this recipe, I will make Korean pancakes or "hotteok". I was inspired to make this recipe because after several times I watched Korean dramas, they featured this food. In this korean pancakes recipe, we will use all-purpose flour, glutinous rice flour and yeast for the main ingredients of the dough. As for the most important ingredient in this recipes is glutinous rice flour because it makes the pancakes chewy and thus more delicious when eaten. If you use only all-purpose flour, the dough will become crunchy instead. But do be careful of the amount of the glutinous rice flour, you have to use the glutinous rice flour according to the amount I mention in this recipe, if you put in too much, the pancakes will be very sticky. If you can't find glutinous rice flour in your area, you can replace it with rice flour, but it won't taste as good as when you use glutinous rice flour.
For the filling, I made 2 varieties, with the main ingredient for both korean pancakes are peanuts. Both fillings are very delicious on its own, and you must try them all.
For the first variant, I used toasted peanuts, crushed and mixed with palm sugar and cinnamon. When the korean pancakes or hotteok is fried, the palm sugar will melt and combined with the cinnamon aroma makes it very fragrant, and the peanuts adds a crunchy texture when you eat it.
The second variant is peanut butter. I also use toasted peanuts, then finely crushed to a powder, mixed with honey and salt. The mixture of honey and salt makes the peanut butter taste sweet and savoury.
