What is Kebuli Rice
Kebuli rice is rice that has a lot of spices added to it. The colour tends to be yellow because it uses turmeric. Rice kebuli comes from Jakarta, Indonesia, but there is an influence from Yemen and India. The taste tends to be more savoury and flavourful with a very strong taste of spices. The original kebuli rice recipes actually use basmati rice, but if you don't have basmati rice you can replace it with regular rice.
What is Shish Tawook
Shish Tawook is a chicken skewered dish, it is marinated chicken and grilled. You can grill it on charcoal or if you don't have it you can use a pan to grill it. Shish Tawook is quite popular in middle eastern dishes. To make this dish, you must marinate it with plain yoghurt and lemon juice, beside giving more flavour, the function of yogurt and lemon juice is to tenderize the chicken. I use chicken breast for this dish, and for extra, I also use onions and tomatoes. If you like a spicy taste, you can add paprika. Overall the shish tawook tastes sour because it uses lemon juice, but the flavour of the spices (turmeric, cumin and curry powder) is also strong, the mixture of ingredients makes Shish Tawook delicious.
Serve the Food
For serving, I add fried shallots on top of the Kebuli rice, and if you like you can also add pickles to add flavour.
