This recipe is for those who are tired of the same old noodle dishes and want to try something new. This time, I will share my best yet easy-to-follow Ifumie recipe. But first, what is Ifumie? Ifumie is fried noodles with stir-fried vegetables on top. This food originated from China and usually can be found in Chinese restaurants.

The ordinary noodle dishes are usually boiled and then served with soup or fried noodles which are fried and then added with other spices. But to make ifumie, noodles are boiled and then fried in a lot of oil until they become crispy. The gravy for ifumie is made from stir-fried vegetables that taste savoury and thick.

As mentioned before, this Ifumie recipe I made is effortless and quite easy, the ingredients can be found in any supermarket, and their price is all affordable. If you're wondering when to serve ifumie, it's equally delicious for lunch and dinner.

For this Ifumie recipe, I used four types of vegetables they are; cabbage, cauliflower, baby corn and carrots. For the type of vegetables, you can replace it with any combination of vegetables you like, from bok choy to broccoli to mushrooms. In addition, I used chicken breast, but you could also substitute it with shrimp, squid, or meatballs instead.

So without further ado, let’s get started with the first step of this best ifumie recipe, shall we?

Note:

  • when you have finished boiling the noodles, soak the noodles in cold water so that the noodles are easy to fry.

ingredients

    • 140 gramegg noodle pack
    • 300 mlwater
    • 300 mlcold water
    • 200 mlcooking oil
    • 1 tbsptapioca flour
  • Stir Vegetables

    • 130 gramcabbage
    • 130 gramcarrot
    • 120 grambaby corn
    • 120 gramcauliflower
    • 60 gramonion
    • 100 gramchicken breast
    • 1 tspgarlic(minced)
    • 1 tbspcornstarch
    • 1 tspsalt
    • 1 tsppepper
    • 1 tbspoyster sauce
    • 1 tbspfish sauce
    • 1 tbspfish sauce
    • 50 mlcooking oil
    • 300 mlwater
    • 1 pc(s)egg

instructions

Preparing the noodles

  1. Put the noodles into the pot, and cook it for around 2-3 minutes.

  2. Strain the noodles.

  3. Soak it for around 1 minute in cold water, then strain the noodles.

  4. Get a bowl, and mix the noodles with a tablespoon of tapioca flour. Mix it evenly.

  5. Get a pan, pour the cooking oil, and turn on the fire with medium heat.
  6. Fry the noodles for around 4-5 minutes until the colour is golden brown, and you can flip it a few times, make sure when you flip gently.

  7. After the frying process is done, you can turn off the fire and set aside the noodles.

Making the Gravy

  1. Slice all veggies and cut the cauliflower into small pieces.

  2. Slice onion and chop the garlic.

  3. Put a tbsp of cornstarch in a small bowl or a cup, and mix it with 100ml of water. We will use it later on.

  4. Cut the chicken breast into slices.

  5. Get a wok, pour oil and heat over medium heat. Stir fry the chicken, garlic and onion until fragrant and the chicken is cooked.

  6. Pour the water and put in all the veggies, give seasonings; salt and pepper. Add oyster sauce and fish sauce, mix well and wait until water boils.

  7. Crack an egg and mix it. Keep stirring it for around a minute or until liquid is reduced.

  8. pour the cornstarch and keep stirring it until it thickens and looks nice.

  9. Put the noodles on a plate and pour the vegetables on top. Enjoy it while it's hot. Ifumie is ready to serve!
