Cheese pie crisps are like one of those light snacks that you can eat constantly and without realizing, you’ve finished the whole bowl of it!

These cheese crisps are made out of a pie-like dough. Why I say it’s like pie is because the method of making the dough itself is like pie dough. The basics of making pie dough is by adding cold butter and water to some flour. It’s a very simple recipe that you can make any time at home with just a few simple ingredients. You don’t even need a bowl to make this, just a bench scraper and that’s it!

In this cheese crisps recipe, you will be required to do lamination as it will add flakey layers to your crisps.

The shapes of the cheese crisps are just small squares but you can always change them up to any kind of fun shape that you want. And since this cheese crisps recipe I made is savoury, you can always replace it with sugar to make them a sweet snack instead. It’s very versatile and you can make it however you want!

Cheese pie crisps is a type of snack that you can make for a get-together or just for you to snack on yourself. It doesn’t take up too much of your time and you can even whip these cheese crisps in 30-minutes time! When it’s complete, you can serve up to 3-5 people!

ingredients

  • For the Cheese Pie Crisps

    • 25 gramsalted butter(cold)
    • 40 gramcake flour
    • 11 mlwater(cold)
    • 20 gramgrated cheese
    • 0.25 tspsalt
    • 0.13 tspblack pepper
    • 15 gramflour(as needed, for dusting)

Making the dough

  1. Grate your cheese using a cheese grater. Set it aside.
  2. On a clean work surface, add your cake flour and cold butter.

  3. Use a bench scraper and make cutting motions to the butter until you get it roughly mixed and the butter is approximately pea-sized.

  4. Make a large well in the middle of your flour mixture and add cold water.

  5. Gradually add flour to the water using your scraper and keep making cutting motions as you go until it forms a dough.

  6. Make a small rectangle and cut it in half. Stack the dough over the other and slightly press down. Do this 2 more times.

  7. Flatten and shape the dough into a square (about 1 cm thick) and wrap the dough in plastic wrap. Chill in the freezer for 15 minutes.

  8. Preheat your oven to 210 degrees Celsius.
  9. Take the dough and make cutting motions to mix everything. Add 10 gr of the grated cheese and season with salt and black pepper. Shape the dough into a ball.

  10. Dust some flour on your work surface and rolling pin and roll the dough into a 12x12cm square.

  11. Add the rest of the grated cheese on top of your dough until it’s fully covered. Take your rolling pin and roll once to press the cheese into the dough.

  12. Use your bench scraper and cut 12 even pieces. Take each piece and shape it into a square.

  13. Take a baking tray with baking paper/mat and add your cheese dough to it.
  14. Bake the dough for 16 minutes or until golden brown on top.

  15. Now you can eat and enjoy it as a snack!
