Banana bread is probably not the bread that you would expect. However, banana bread is still part of the bread group but is typically grouped as a quick bread. Other types of quick bread include zucchini bread, cornbread, pancakes, etc.

The difference between quick bread and regular bread is the type of leavening agent that’s used. While regular bread is usually made with yeast/starters, quick bread is made with baking soda/baking powder, making the texture more like a cake texture. Quick bread also doesn't need a kneading process thus, creates less gluten in the dough/batter.

Banana bread is sweet but the texture is much denser than a regular cake. Typically, banana bread is not a dessert but more as a dish usually eaten with coffee/tea. You can easily find this dish at your local coffee shops/bakeries.

The main flavour of banana bread is bananas, but also a common type of spice used for this dish is cinnamon. Others might use cardamom, cloves, nutmeg, etc. but for me, cinnamon is the perfect pairing for banana bread.

As for the banana itself, you always want to make sure the banana that you use has ripened. The more ripe your banana is, the sweeter and caramelized your banana bread will be. The type of banana is also very important. The most neutral and easily found are Cavendish bananas. They have a slightly sweet taste (sweeter when ripe) and creamy texture. This will be the type of banana that we’re going to uses

For the banana bread recipe this time, I chose to use brown butter since it gives a caramelized taste and everything always tastes better with brown butter! I also chose to use all brown sugar since it helps give a softer texture to the banana bread. I also wanted to give another element of texture to this recipe so I added cinnamon crumble to it. So everytime you take a bite you will be getting an element of soft and tenderness with a little bit of the buttery crunch from the cinnamon crumble.

Additional Notes from Author:

  • Make sure the bananas are fully ripe. The darker the banana peel is, the riper it is and the sweeter the banana bread will be.
  • You can make plain banana bread or add nuts like walnuts or almonds. You can also add chocolate chips to make chocolate chip banana bread.

ingredients

  • For the Cinnamon Crumble

    • 27 gramcake flour
    • 10 grambrown sugar
    • 0.25 tspcinnamon powder
    • 1 pinch(es)salt
    • 18 grambutter(room temperature)
  • For the Banana Bread

    • 28 grambutter(room temperature)
    • 1 pc(s)small ice cube
    • 14 gramgrapeseed oil
    • 35 grambrown sugar
    • 20 grambeaten eggs
    • 0.5 tspvanilla extract
    • 75 gramripe bananas
    • 30 gramplain yogurt
    • 47 gramall-purpose flour
    • 0.25 tspsalt
    • 0.25 tspcinnamon powder
    • 5 gramveg. oil(as needed, for brushing)

Making Brown Butter

  1. Place butter (for the banana bread) in a saucepan and melt the butter on high heat. Turn the heat down to low and keep stirring the butter until it turns brown and you can smell the caramelization. Turn the heat off and add a small ice cube. Stir until the ice has melted. Add to a bowl and set it aside to cool for 15 mins. or until cool to the touch.

Making Cinnamon Crumble

  1. In a bowl add your cake flour, salt, cinnamon powder and brown sugar. Mix with a rounded bench scraper until incorporated.

  2. Add the butter and make cutting motions to mix everything until it forms a crumble. Chill in the fridge until ready to use.

Making Banana Bread

  1. Take your ripe bananas and mash them with a fork.

  2. Preheat the oven to 180 degrees celsius.
  3. Prepare an 18x10cm mould and brush with vegetable oil.

  4. Add all-purpose flour, salt, baking powder and cinnamon powder together. Whisk until well combined.

  5. In a bowl of the mashed bananas, add plain yogurt and vanilla extract. Mix until well combined.

  6. Add the grapeseed oil to the bowl of brown butter and mix well.
  7. In a bowl, mix the beaten eggs and brown sugar until it’s thickened and well combined.

  8. Add the wet banana mixture to the egg and sugar mixture. Whisk until well combined.

  9. Take the butter and oil mixture and stream slowly into the batter.

  10. Slowly add your dry ingredients gradually, while whisking to make sure no lumps have formed. Mix the mixture until all dry ingredients are gone.

  11. Fold the batter with a spatula to make sure everything is well-incorporated.
  12. Pour the batter into the baking mould.

  13. Take your crumble topping and break it in your hands. Spread the crumbs on top of the batter until the top is fully covered.

  14. Bake for about 25 minutes or until a toothpick comes out clean when inserted.

  15. Now you can slice the cake and enjoy it while it’s still nice and warm!
