I always love drinking coffee or tea with a side snack, don’t you? Sable cookies, or as some call it, butter cookies are one of the best snacks to bite on with your favourite drink.

Sable cookies are simple and easy and you can make different flavours once you know the basic recipe. So instead of just one flavour, I’m going to show you how to make 3 different flavours: Matcha, Chocolate, and Cheese.

The bases of these cookies are butter, sugar and flour. There are no leavening agents used in this recipe so you can just make this with the basic ingredients you have at home.

This recipe also does not need any electronic baking tools. Just need some bowls and a spatula and you’re all set. These cookies are shaped using only your hands or a knife, but you can always go wild with creativity and make more appealing shapes using cookie cutters.

ingredients

  • Ingredients for the Basic Dough

    • 100 grambutter
    • 55 grampowdered sugar
    • 0.25 tspsea salt
    • 0.5 tspvanilla extract
    • 1 pc(s)egg
    • castor sugar(as needed)
  • Cheese Dough

    • 12 gramalmond powder
    • 43 gramcake flour
    • 20 gramgrated cheddar cheese
  • Matcha Dough

    • 10 grampowdered sugar
    • 12 gramalmond powder
    • 43 gramcake flour
    • 4 grammatcha powder
  • Chocolate Dough

    • 12 gramalmond powder
    • 43 gramcake flour
    • 5 gramcocoa powder
    • 20 gramdark chocolate chips

instructions

Making the dough

  1. Take your butter with a spatula. Beat and mix in motion until creamy and soft in texture.

  2. Sift the powdered sugar into the butter and mix until well combined.

  3. Separate the yolk and egg whites and set the egg whites aside. Add yolk, vanilla and salt to the butter and mix well.
  4. Weigh the dough and divide into 3 even amounts. Put the other 2 in the fridge while we make the first dough.

Make cheese dough

  1. Take one of the three base doughs and sift flour and almond powder. Use the spatula and make cutting motions until the mixture is ¾ mixed. Add the grated cheese and mix until well-combined.

Make matcha dough

  1. Take the second base dough from the fridge and add sifted powdered sugar. Mix together until well-combined and add sifted flour, almond powder and matcha powder. Mix the dry ingredients until well combined.

Make chocolate dough

  1. Take the final base dough from the fridge and add sifted flour, almond powder and cocoa powder. Mix until ¾ mixed and add the chocolate chips. Fold the dough until all ingredients are combined.

Get ready for Baking

  1. Get some plastic wrap and put the dough onto the wrap. Roll the dough until elongated in shape and rest in the freezer for 30 mins. to an hour. Do this to all the doughs.

  2. In a flat tray, add castor sugar as needed. Then take the egg white from before and brush it onto the sides of the dough. Then roll the dough onto the sugar until all sides are covered. Do this to all 3 doughs.

Baking

  1. Preheat the oven to 170 degrees celsius for 10 mins.
  2. Cut the dough with a knife and add it to a baking tray lined with baking paper or a silicone baking mat. Bake for 15 mins. or until the surface is firm when you touch it with a spoon.
