I love almond cookies, more specifically, almond tuile. So, what is a “tuile”? For those who aren’t familiar with the term, it is a name of a type of french cookie. What makes this so unique is that it’s thin and crispy. They’re super light and delicious too.

Tuiles are mainly used as a garnish for desserts like cakes, ice creams, mousse, etc.

In this recipe, I will show you how to make a version of a tuile that includes almonds and cheese in it.

Because of its thin texture, when it’s freshly baked out of the oven, you can basically mold the cookie into the shape you want. You can make them into “pringles” shape, which I will show how in this recipe; roll them, or even just leave it as it is.

Notes*

  • You only need the electric mixer when making the meringue.
  • Make sure not to get any yolks into the egg whites, otherwise a meringue will not form.
  • Move quickly to shape the cookies, and it only works when it’s still very hot from the oven. You have the option to use latex gloves to protect your hand, but it will still be hot. So please be careful.

  • For the Almond Cheese Tuiles

    • 1 pcsegg whites
    • 35 grampowdered sugar
    • 10 gramall-purpose flour
    • 5 gramcorn starch
    • 15 gramalmond flour
    • 20 gramshredded cheese
    • 25 grammelted butter

Making Almond Cheese Tuiles

  1. Preheat the oven 190 celsius. Grab two clean bowls and separate the eggs from the yolks and the whites.

  2. Take the egg whites, measure it out to be 35 grams, and whisk with an electric beater until small bubbles form. Slowly add the powdered sugar. Keep whisking until medium peaks.

  3. Using a sifter, sift flour, almond flour and cornstarch and whisk together.
  4. Add the shredded cheese to the dry ingredients and add to the meringue.
  5. Use a spatula to fold the batter until incorporated.

  6. Melt the butter, let it cool for 5 mins and add it to the batter. Fold until well-mixed.

  7. On your baking tray, line it with baking paper or a silicone baking mat. Add a tablespoon of the batter and spread the batter out to make it thin.

  8. Bake the cookies for about 15 minutes or until it turns golden brown.
  9. While still fresh hot from the oven, move quickly to make the shape of the cookies. You can use a rolling pin and put the cookies there to make a shell-shaped or carefully roll the cookies to make a straw shape. Or leave it as it is to make a flat cookie.
